BASIC DRESSING

1/2 c. oil (extra-virgin olive oil or avocado oil)
1/2 c. acid (balsamic vinegar, champagne vinegar, apple cider vinegar, lemon/lime juice)
1/2 teaspoon Dijon mustard
seasonings to taste

Add all ingredients to a high-speed blender (bullet words great) or whisk by hand, blend until emulsified. Use immediately or store in class or ceramic.

CLASSIC BALSAMIC VINAIGRETTE

1/2 c. extra-virgin olive oil
1/4 c. balsamic vinegar
1/4 c. lemon juice
1 1/2 tsp. mustard
1 clove garlic mashed + chopped
1 tsp. minced fresh rosemary

ASIAN-INSPIRED (great with Miracle Noodles + VEG)

1/2 c. toasted sesame oil
1/4 c. lime juice
1/4 c. rice wine vinegar
1 1/2 tsp. mustard
1 clove garlic mashed + chopped
1 tsp. grated fresh ginger
1 dash coconut aminos

CREAMY DRESSING

1/2 avocado
1/4 c. lemon juice
1/4 c. white balsamic or rice wine vinegar
1 1/2 tsp. mustard
2 Tbs. fresh parsley
1 clove garlic mashed + chopped
